CHILLY MOMOS

Ingredients :- 
For the dough 
Wheat flour - 1 cup
Plain flour - 1/2 cup
Salt - 1/2 tspn
Water- 3/4 cup
Oil- 2 tspn
For the filling
Cabbage - 2 cups (grated)
Carrots - 1 cup (grated)
Onion - 1 medium sized (finely chopped)
Ginger - 1 inch piece (grated)
Salt - 2 tspn
For Chilly Momos
Oil - 4 tbspn
Tomato sauce - 4 tbspn
Red chilly sauce- 3 tbspn
Soy sauce - 1 tspn
Red chilly flakes - 1 tbspn
Corn starch - 2 tbspn
Spring Onion - 1/2 cup (if available)
Onion - 1 medium sized (cut into cubes)
Capsicum - 1 medium sized (cut into cubes)
Garlic - 6-7 cloves .
Water
Salt to taste


Directions :-
1) In a bowl mix Wheat flour, Plain flour and salt and add water little by little and make a soft dough, cover it with damp cloth and let it rest for 10 mins.
2) Till than add the grated cabbage, carrots, onion, ginger and salt and mix well, and set this mixture aside.
3) Now after 10 mins knead the dough on a counter top for minimum 5 mins, and again let it rest for 10 mins.
4) Now, squeeze the vegetable mixture generously as all the veggies would be moist and start oozing water as we added salt. Now our filling is ready. (Do not throw this water from the veggies )
5)Now take the dough and knead again for 5 mins and make equal portions , this dough will make 18- 20 roundels.
6) Now, Roll the ball into thin disc where the edges are slightly thinner than the centre, add 1 tspn veggie mixture and fold it.
7) Now, in a steamer, (or you can create your one own, by keeping a water bath in a large pot and sieve over it), slightly grease it with oil or you can keep the remaining cabbage leaves as it will prevent sticking to the steamer and the edges.
8) Keep our prepared momos and let it get steamed for 10 - 12 mins on medium high flame. Do not worry if the colour is not white, as we have used wheat flour it will be slightly pale in colour.
9) Heat the oil and add our prepared steam momos (just check they don't have any moisture or else the oil would splatter) and fry them till slightly golden.
10) Now, in a wok or a pan, add 4 tbspn oil, when nice hot add the finely chopped garlic, cubes of  onion and capsicum, let it cook for 1 or 2 mins, and start adding all our sauces (tomato, red chilly, soy ) and mix well,
11) Make the slurry of corn starch by adding 1/2 cup water (or even the water from the veggies ), and add to the wok, and stir well and let it simmer for 2 mins.
12) Now, add our crispy fried momos to the sauce made, add red chilly flakes and half of spring onions and mix well, and let the momos get nicely coated with our spicy tangy sauce for 2 mins. (Adjust water consistency as per your taste)
13) Garnish with the remaining spring onion and serve super hot and enjoy....
